The ability to add into the contract/ proposal late payment fee for after a duration of time upon completion that adds a % penalty dating back to the completion date and compounds from day 1 after completion, and the wording of that being stated at acceptance of proposal. and of course the ability to override and take off penalty (even after its applied) in case of verbal agreeance after deadline with client.
